Stir-fry Okra with Sambal and Dried Shrimp

I loves Okra with sambal or it's called Lady's Finger in Asia. Since I love Okra so much, I sowed some Okra's seeds in my vegetables garden. While waiting for my Okra plants to grow,I bought some Okra from Indian store nearby.Well,you must wonder why I bought my okra at Indian store not local market,right? Our local market do carry okra but at higher price than Indian store,so instead of $3.99 a pound I can get a pound for $1.99!! Furthermore ,the India store let's me choose and pick the okra.I prefer younger okra for stir-fry..This dish is a very common okra dish in Malaysia ..Ask any Malaysia,if they love okra, I'm sure they love this stir-fry Okra with sambal and dried shrimp.

2 lbs okra,cut both end ,wash and drained
1 small carrot,peel and sliced
4 tbsp dried shrimp,washed and chopped or pound fine
3 tbsp sambal-tumis-sauteed-chili-paste
1 tbsp tamarind powder
2 tbsp sugar
1 tbsp chicken bouillon powder
2 tbsp oil


1: Cut and wash okra,then microwave for high 2 minutes.

2:Heat skillet/pan at medium heat with oil,add in pounded dried shrimp,fry dried shrimp until fragrant.Then add in sambal-tumis-sauteed-chili-paste ,carrot and pre-cooked okra.

3: Stir-fry okra at high heat,add in tamarind powder,sugar and chicken bouillon powder ,stri-fry for 1-2 minutes.Check the seasoning.If you want more spicy and extra sauce/gravy ,add in more sambal and 2 tbsp water.

4:Dish out and serve warm immediately.

A wonderful idea to spice up the okra! You know, I would also love them with XO seafood sauce!

Oh I can't wait to try this I have Okra growing in my backyard right now. I love dishes with a lot of heat and spice.

I never try cooking okra with XO sauce,must try one day!! Anyway,I used sambal paste for this dishes too..s
