Salt and Pepper Crab

Last week when I was at Asian market I bought a dozen of blue crab.Mishu and me both are crab freak,we can easily eat a dozen crab in an hour.Too bad here in US and A we can't get nice meaty large fresh crab like Sri Lankan crab or Mud crab.I don't really like Snow crab and Alaskan King crab leg coz it's comes in frozen form not fresh and alive.
After cleaning and cutting the blue crab,I plan to cook Chilli Crab but due to time restrain I just coated with flour and seasoning to make Salt and Pepper Crab.To my surprised hubby loves it!! Usually he don't eat any seafood with shell or hard shell but after he tried one pieces,he keep going for more!!

1 dozen blue crab, clean and cut to 1/2 each
1/2 cup self raising flour
1/4 cup corn flour
1 tbsp salt
1 tbsp ground white pepper
*combine all dry ingredients together in a large container*
1 tbsp sugar+1 tbsp seasalt+1 tbsp ground white pepper
1 stalk scallion, washed and cut 2 inch each
1 red whole red pepper, washed and sliced
2 cups cooking oil

1:Heat fryer or large skillet or wok with oil at medium high heat..Coat cut clean crab with flour mixture, shake the excess flour, then place in hot oil to fry till lightly brown or 1 minutes each side.Repeat to cook all the crabs till done.Dish cooked crabs out and set aside.
2:Remove oil from skillet ,reduced heat to medium ,use the same skillet, pour back the cooked crab into the skillet, then immediately sprinkle salt and pepper mixture all over the crabs, toss crabs in the skillet and keep tossing crabs for 3 minutes till all the seasoning well combine wt cooked crabs to form a crunchy and tasty coating.Check the seasoning.
3:Add in cut scallion and sliced whole red pepper into the crabs, toss few times before dish out and serve warm and snack or meal.

Blue crab coating in flour mixture frying in hot oil in wok.

Nice crab dish! I agree with you that Sri Lankan crabs are the best..so meaty and juicy. But I dare not cook them at home because the markets sell them alive. Dare not 'slaughter' the crabs or asked the seller to do it in front of me. I'll feel awful inside & can't eat them after that. So, I always go to a restaurant if I want to eat crabs.

thanks! oh!! don't Chinatown in London sell live crabs?

petite nyonya:
lucky you can get the seller to slaughter crabs for you!! but never mind, just hop into the seafood restaurant and enjoy without all the hard work, right?

It was my mom's birthday last night and I wanted to make a special meal for her and the family, I figured I could just throw some ingredients together and try to get Salt and Pepper crab to come out of it. But after about 5 minutes I decided I needed help from the internet. I browsed around a few recipes from other people before settling on your version. It was very simple, easy to follow, and the part where you mention your husband couldn't stop eating it got me. :) I easily made the meal after about 20 minutes and everyone that had some loved it! It was just right, not too salty not too light, just perfect. Thank you so much for sharing your recipe, I will be sure to make this again for my husband when he come home from his trip!
