Ingredients:
2 large whole white squid,about 2 pounds,cleaned and cut
1 large onion,peeled and sliced
1 stalk scallion,washed and cut 2 inch
3-4 tbsp sambal-belacan-paste or add more if you want a stronger flavor
4-5 pieces kaffir lime leaves
1 tbsp sugar or salt to taste
1 tbsp tamarind powder
2 tbsp oil
Method:
1:Clean and cut squid ,drained.Use a sharp knife cut lightly on squid body vertically and then cut horizontally on the same side before cut all the way through for about 2 inch each piece,set aside.
2:Heat skillet at medium high heat with oil,add in sambal-belacan-paste and kaffir lime leaves ,stir-fry for 30 second.Add in cleaned squid ,onion,sugar,salt and tamarind powder,cook for 1 -2 minutes or until squid curl up(cooked).Do not add water,the squid itself have water retention.Check the seasoning.
3:Toss in cut scallion ,dish out and and serve warm with rice or noodle.

I love sotong I mean squids !Especially with sambal , I can eat lots of rice with it ! But my hub is getting very health concious these days so I have to cut down on all these seafood except fish... thanks for sharing.

Man....this sotong dish is too mouth watering...like you, I love hot and spicy food too, the spicier the better!. My hubs see squid, he will make a face, won't even touch them but he will eat calamari - go figure! I have to try make my own sambal belachan but using the belachan paste, not the dry one. Hope it will turn out good.
everytime when i cook sotong, i always can't estimate the time for it to be cooked and ended up having tough and hard-to-chew sotong. i think i'll try this recipe and see whether i would succeed or not.
This dish makes me hungry even thought I just got done eating! I love hot and spicy food the hotter the better LOL..If I make this dish I will be the only one eating this..Hubby not a seafood fan!

Thank you:) maybe you should just stir-fry or microwave sotong by itself first for 1-2 minutes,set aside then you add in the paste and vegetables in skillet,lastly add in sotong,mix well,dish out immediately!! don't cook anymore!! then you can have soft and chewy sotong not tough to chew rubber!! Hope this help:D

I normally cook what I want to eat but then sometimes I'm sick of cooking one plate and have to eat it myself but for days because I'm the only one eating it..sometimes gets very sian also..At least you train Mishu from young you have a makan partner..LOL

remember when you have kid,train them from young to eat our spicy and hot food...eh! I train Mishu to eat Malaysia food the moment she eat solid food..now she ask me for spicy food..especially the crispy shrimp chilie whenever she eat mee!! haha!
