Salt and Pepper Shrimp

I like to use shrimp with head-attach when cooking Asian or Chinese dishes.I guess being Chinese ,I used to eat un-shelled and head attached shrimp.Hubby always complaint when he see shrimp with shell or tail attached in his meal..He said it's not enjoyable or appetizing to eat un-shelled with tail attached shrimp.I guess I can said this American or overall American are spoiled or they dunno how to enjoy real succulent seafood.(*prepare to get bash now* no offense to all's just something I observed for many years while living in this wonderful land.I guess you can said it's culture or eating method are different )I really enjoy sucking the succulent juicy liquid in the head of the shrimp..That same goes for crab or I decided to cook a special dish just for myself:Salt and Pepper Shrimp !!!.hehehe!! yea... you hear me right? For myself!!


1 lb un-shelled and head attached shrimp,wash
5 tbsp rice flour
2 cloves garlic,peeled and minced
1 long red pepper,sliced
1 medium onion,peeled and cut diced
2 sprig curry leaves
1 egg
1 tbsp sugar
1 tsp salt
1 tsp ground white pepper powder
2 tbsp butter
5 tbsp canola oil


1:Heat skillet at high heat with oil.Coat clean shrimp with rice flour before place on the hot skillet.Pan-fry shrimp on both side until crisp golden brown.Remove cooked shrimp to a plate and set aside.
2:Use the same skillet,reduce heat to medium ,add in butter,curry leaves and garlic.Fry garlic until fragrant,toss in red pepper,onion and egg.Stir in all the ingredients until well mixed.
3:Increase heat to high,toss in cooked shrimp,sugar,salt and pepper for 30 seconds .Check the seasoning before dish out and serve warm.

That is one tasty looking dish! Yeah, I'm with you on that one - I'm a prawn head sucker too! Love it! Keeping shell on means prawn doesn't cook too quickly, the juices styay within & it gives a better flavour - in my opinion!
I'm licking my fingers just dreamy of that prawny goodness!

I didn't take offense to the American bash, but I have to ask seems your shrimp are still cleaned, no eyes or antenna. I realize maybe I need a tutorial on how you clean srimp when they have heads (i can shell my own). I do love salt and pepper shrimp but I've never seen any so un-antenna-less. The antenna feelcreepy and don't chew down well. Could you help with that? Thanks

We are both the same. Love shrimps with head and shell intact. Carlos is just like Elliot. Nothing with head on. He can't eat with eyes staring back at him ha ha..

Thank you:)oh yes!!actually I love to eat fresh prawn in Asia..I can taste the freshness flavor of the prawn itself..Mostly the shrimp we buy in asian market are from South America like Peru or Equador..

if you want your shrimp head attach when cleaning,simply use scissor to snip the antenna and the legs away..then use a very sharp paring knife to butterfly the shrimp in order to remove the vein..Hope this help:)hope to see you again!!

Gert,welcome to the club!!I think all kwailo are same ..Mine is super lazy.whenever we visit chinese restaurant when he see shrimp with tail attach,he will need to said shell attach..of course he won't eat!!I also realise when eating at Italian restaurant,they really clean up all the shrimp,no tail or anything attached,just pop into our mouth then you go...but did you realise the shrimp at western restaurant doesn't taste sweet or any seafood flavor at all ...I guess they took so much time to clean the shrimp,then chemical was added to preserve the shrimp from getting rotten..that why I refused to buy shrimp that has been clean or cooked..simply tasteless like eating rubber!!

Yeah...missing fresh prawns in Hong Kong :0( If I go there I must eat fresh prawn just boiled eaten with spicy soy dipping sauce! My fav!
Here in UK all prawn is frozen and can be from India/Vietnam.....
