Mopo Tofu (Spicy Bean Curd)

This is my first time making Mapo Tofu.This dish is a must have menu in any take-out restaurant or Chinese American restaurant in States .Mapo Tofu or Doufu is a spicy Szechuan dish made with marinated pork, mashed black beans and bean curd.The name Ma Po Tofu is roughly translated as "pockmarked grandmother bean curd," named for the old woman who supposedly invented the dish.To make this Mapo tofu ,I tweaked it with my own special sauce mixture .Basically I know what to use as the main ingredients to make the sauce.I guess nothing will go wrong as long as it's editable,right? Honestly,this dish have better flavor than what I expected.

1 block of soft tofu,cut small about 1x1 inch
300 gm minced pork(lean and fat mixture)+2 tbsp corn flour+1 tbsp chicken bouillon powder

1 small onion,peeled and diced
3-4 cloves garlic,minced
2 tbsp tau-chu( fermented ground bean paste)
2-3 tbsp ground chili paste(sambal odek) add extra if you prefer spicy
1 tbsp sugar
salt to taste
1/2 cup water

3-4 tbsp corn oil

handful cut cilantro for garnishing


1:Marinate minced pork with chicken bouillon powder and corn flour.Add in 2 tbsp water ,mix well,set aside.
2:Heat wok with oil at high heat.Add in garlic,fry until fragrant,then add in chili paste and bean paste,stir for 1 minute before toss in minced pork mixture,onion and water.
3:Simmer the sauce for 3-4 minutes ,add in sugar and salt to taste.Check the seasoning.Add in cut tofu,slowly use spatula to mix the tofu with the sauce mixture.Do not over stir the tofu .When the sauce bubbly boil,remove from heat.
4:Dish out ,sprinkle with cilantro and serve warm with steamed white rice.

Chinese Paper Cups Sponge Cake

Last weekend Mishu's Chinese school had a BBQ party on the last day of school to celebrate this coming summer.Parents who are going to attend with their child are given  choice to bring an appetizer or a dessert for the party at one of the parents home who host the party.I decided to baked some Chinese Paper Lined Sponge Cupcake as the dessert.This is my second time baking this sponge cake but this time the method is different from my previous paper-lined-sponge-cupcake..Honestly,I think this method is much more simply and easy compare with the previous method.Happy Baking!!

Ingredients:(I double the portion to make almost 25 small cups)
5 large eggs
100 gm cake flour,sifted
120 gm sugar
1 tsp Ovallate
50 gm whole milk
60 gm melted butter

1:Prepare cups with parchment paper on a baking sheet.(I used ex-large cupcake liner over papercups)Preheat oven to 360 F or 180 C.
2:Combine all ingredients except melted in a mixer.Beat the mixture at high speed for 10 minutes or until ribbon stage.Add in melted butter into the batter.
3:Scoop the batter to prepared cups at 3/4 full.Bake for 25-30 minutes or until the top slightly golden brown.
4:Remove cupcake from oven and allow to cool for few minutes.Then remove cake from cup immediately, transfer to a wire rack to cool completely .

Omurice (Japanese Omelete Fried Rice)

This is my 1st time making Omurice.Omurice is a Japanese word for "omelet and rice." Seasoned and fried rice is wrapped or topped by omelet.Well,I think I watched too many (kdrama)Korean drama.I was inspired by Rooftop Prince to make this Japanese fried rice.Instead of Calrose rice, I used regular jasmine rice for the fried rice.

2 cups or more of cooked steamed white rice,overnight preferred
200 gm boneless chicken breast,cut cube
10-15 small shrimp,un-shelled and clean
4-5 sprig of green mustard or scallion (or any vegetable)cut small
1 small onion,peeled and diced
1 tbsp minced garlic
5-6 tbsp oil
3-4 large eggs

1 tbsp chicken bullion powder
salt to taste
1 tbsp white ground pepper powder
2 tbsp ketchup

some cut cucumber and tomato on side

1:Heat skillet with some oil at medium high heat.Crack all the egg in a bowl,and whip it.Add in a dash of salt and keep whip it until well mix.
2:Pour the egg mixture onto the skillet,use the handle to spread the eggs evenly over the skillet:Omelet style.When the egg slightly brown,remove from the skillet into a large plate,set aside.
3:Use the same skillet at high heat.Add in some oil and garlic,fry until fragrant.Add in chicken and shrimp,mix well for 3 minutes.Add on onion,greens,rice and all the seasoning.Use spatula to keep stirring all the ingredients well for 10 minutes.
4:Check the seasoning,scoop the rice onto the omelet and wrap it over in a pouch.Drizzle some ketchup on the top of the omelet.Garnish with some cut tomato and cucumber,serve warm.

Stir-fry Rice Cake with Roast Pork and Clam

I had a pack of dried rice cake been sitting in my pantry for months.Can't decide what to do with it..At last ,I decided to stir-fry with leftover roasted pork(char sui)

1/2 pack of dried rice cake,soaked in warm water  for 1 hour or until soft
4-5 cloves garlic,peeled and minced
1 cup sliced roasted pork(char sui)
quarter cabbage,sliced and washed
1 pound clam meat
2 eggs
1 red chili pepper,sliced

2-3 tbsp oil
1-2 tbsp caramel sauce
1 tbsp chicken bouillon
1 tbsp ground white pepper
salt or soy sauce to taste
1/2 cup water

1:Soak dried rice cake in warm water until soft.If the center is still tender,it's OK.Heat wok at high heat with oil.Add in minced garlic,fry until fragrant,add in ,rice cake,roast pork and cabbage.
2:Stir -fry all the ingredients for 2-3 minutes .Then all in water and all the seasoning,mix well.Simmer for 5 minutes,keep stirring all the ingredients ,do not let the rice cake stick on the bottom..Check the seasoning.
3:Use spatula to open a hole in the center,add in some oil.Crack in the eggs,scramble the eggs ,toss in clam meat and mix with the rest of the ingredients well

Grilled Tandoori Chicken

Whenever I shopped at a nearby Indian grocery store,I will always buy one or two  packs of their special spices.One of the spices is Tandoori chicken Mix.This type of spice mix is easy and simple to use for cooking or grilling.All I need is yogurt but I don't have yogurt in hand,so I decided to use coconut milk instead.The result is really awesome!!


10 pieces of chicken thigh or any part of chicken
200 ml coconut milk
1 pack tandoori mix
1 tbsp sugar
Oil spray

1:Combine coconut milk,sugar and Tandoori mix in a medium large container,mix well.Coat all the chicken thigh with the spices mixture and marinated overnight.
2:Preheat oven to 380F.Line aluminium foil over a tray. Spray oil on the aluminum foil,place marinated chicken on the tray.
3:Grill the chicken in oven for 35-40 minutes.Remove from oven and serve warm.

Nasi Goreng Kampung (Village Style Fried Rice)

Who don't like fried rice? I think all Asian or Chinese love fried rice regardless  what style or type of fried rice ,right? By the way, last year I brought back few kilos of anchovies from Malaysia.My poor mom bought it for me at wet market.She bought the one with head attached.She cleaned and removed all the heads of the anchovies for days before vacuum packed it...I told her to get the ready clean anchovies but she said the ready clean anchovies is not a good quality anchovies(low grade)..Well,for me it's doesn't matter as long as the anchovies was clean and ready to fry ,I'm OK with it.Last week ,I fried a kilo of the clean anchovies and store in air tight container.Accordingly to hubby the whole house smell like dirty socks!! lol!! But my dear Mishu also love anchovies.We can eat all the fried anchovies in one go!!

2 cups of cooked steamed white rice,prefer overnight
1 large onion,peeled and diced small
1/2 lb green mustard(choy sam)clean and cut small
300 gm boneless chicken breast,diced
20 small shrimp,clean and un-shelled
3-4 eggs
6-8 Thai's chili pepper,sliced
3-4 cloves garlic,peeled and minced
salt to taste
4-5 tbsp oil
2 tbsp ground white pepper powder
1/2 cup fried anchovies
1 stalk scallion,cut

1:Heat wok at high heat with oil.When the wok is sizzling hot,crack in all the eggs and scramble it for 2-3 minutes,then dish out set aside.
2:Use the same wok, drizzling some oil and garlic.fry garlic until fragrant.Add in diced chicken,fry for 2-3 minutes,add in ,Thai's chili,shrimp and onion,fry for 2 minutes.
3:Toss in rice,use spatula to keep mixing all the ingredients well.Add in cut mustard green,salt,scramble eggs and ground pepper powder,mix well for 5-10 minutes.
4:Check the seasoning.Remove from heat,dish out.Top fried rice with some fried anchovies and cut scallion.Serve warm with sliced cucumber and tomato on the side.

Roasted Soy Sauce Chicken Wing

 It's been a while since I roast soy sauce chicken wing.This recipe is so simple and easy.All I needs is soy sauce,salt ,sugar and Chinese wine!! All these ingredients can be found in any Asian grocery store everywhere..

20 whole chicken wings,clean
1/2 cup soy sauce for marinate
2 tbsp seasalt
1/2 cup sugar
3-4 tbsp Chinese rice wine


1:Combine all the seasoning in a medium large container,mix well.Toss in all the wings,marinate overnight in the fridge.
2:Preheat oven to 375 F.Prepare baking sheet over aluminum foil with wire rack on the top.Place all marinated chicken wing on the wire rack.Roast the wings for 30-35 minutes or until slightly charred burn on the skin.
3:Remove from oven and serve warm with chili sauce.
