Who don't like fried rice? I think all Asian or Chinese love fried rice regardless what style or type of fried rice ,right? By the way, last year I brought back few kilos of anchovies from Malaysia.My poor mom bought it for me at wet market.She bought the one with head attached.She cleaned and removed all the heads of the anchovies for days before vacuum packed it...I told her to get the ready clean anchovies but she said the ready clean anchovies is not a good quality anchovies(low grade)..Well,for me it's doesn't matter as long as the anchovies was clean and ready to fry ,I'm OK with it.Last week ,I fried a kilo of the clean anchovies and store in air tight container.Accordingly to hubby the whole house smell like dirty socks!! lol!! But my dear Mishu also love anchovies.We can eat all the fried anchovies in one go!!
Ingredients:
2 cups of cooked steamed white rice,prefer overnight
1 large onion,peeled and diced small
1/2 lb green mustard(choy sam)clean and cut small
300 gm boneless chicken breast,diced
20 small shrimp,clean and un-shelled
3-4 eggs
6-8 Thai's chili pepper,sliced
3-4 cloves garlic,peeled and minced
salt to taste
4-5 tbsp oil
2 tbsp ground white pepper powder
1/2 cup fried anchovies
1 stalk scallion,cut
Method:
1:Heat wok at high heat with oil.When the wok is sizzling hot,crack in all the eggs and scramble it for 2-3 minutes,then dish out set aside.
2:Use the same wok, drizzling some oil and garlic.fry garlic until fragrant.Add in diced chicken,fry for 2-3 minutes,add in ,Thai's chili,shrimp and onion,fry for 2 minutes.
3:Toss in rice,use spatula to keep mixing all the ingredients well.Add in cut mustard green,salt,scramble eggs and ground pepper powder,mix well for 5-10 minutes.
4:Check the seasoning.Remove from heat,dish out.Top fried rice with some fried anchovies and cut scallion.Serve warm with sliced cucumber and tomato on the side.

ReplyDeleteYeah if we want it or if my mum sis's living overseas wants some she will buy ahead of time take her time to peel freeze it and give it to us. Very tedious! We are so lucky! Lol
When my sis was here over the weekend we made pan mee and I just fried some some too.. I fry my using microwave though.
