2 lb minced chicken meat
50 gm chopped carrot
2 red sweet pepper,de-seeded and cut small
1 small onion,peeled and cut small
1 stalk green scallion,washed and cut small
1/2 block soft tofu,cut small
2 sprig Thai's basil,use leafs only chopped fine
1/4 cup all purpose flour,plus extra for dusting
2 large eggs
2 tbsp fish oil
2 tbsp oyster sauce
1 tbsp sugar
1 tbsp chicken bouillon powder
1 tbsp sea salt
1 tbsp ground black pepper
1/2 cup vegetable oil
1:Combine ingredients A and B together in a large bowl.Use a large spatula to mix the ingredients well.Check the seasoning.
2:Heat skillet with oil a medium heat.Pat your hands wet with cold water.Use the spatula to scoop a handful chicken mixture on your palm,shape like burger shape.Place the patty on the skillet. Fry both side of the patty until golden brown,about 5 minutes.
3:Remove chicken cake from skillet to a paper towel to absorb oil.Cut the cake and serve warm with your favorite sauce.
