Atlantic blue crab and Chesapeake blue crab are one of my favorite seafood.The best season to eat these type of blue crab is after winter.There are few ways to cook this delicious eggy and creamy crabs.One of the best method is stir-fry with egg ,ginger and garlic.
2 dozen blue crabs,separate shell,remove gills and clean(male crabs prefer)
1/2 cup all purpose flour
2 inch ginger, julienne
4-5 cloves garlic,peeled and minced
5-6 Thai's chili
2 stalk scallion,cut 2 inch
2 tbsp soy sauce
1 tbsp sugar
1 tsp salt
1 tsp ground black pepper
1 cup canola oil
1:Wash,remove gills and clean and cut blue crab into 2 parts.Coat crabs with flour.Heat canola oil in wok at high heat.Place coated crabs in the hot oil and fry for 3-5 minutes.Remove fried crabs and set aside.
2:Remove excess oil to a bowl,then use the same wok with some oil.Toss in garlic ,Thai's chili and ginger,stir-fry for 3 minutes or until fragrant.Crack in the eggs,scramble well.
3:Toss in the fried crabs,ground black pepper,salt,sugar and soy sauce,mix well.Lastly toss in cut scallion.
